Synthesis of Sucrose by a Plant Enzyme Extract

Abstract

AN enzyme capable of sucrose synthesis has been prepared from dried cells of the bacterium Pseudomonas saccharophila 1. This enzyme, sucrose phosphorylase, catalyses the reversible reaction . The equilibrium constant for this reaction is 0.05 at pH 6.6 and 30° C.2. Attempts to demonstrate a sucrose phosphorylase in various plant tissue extracts have been unsuccessful3.
