Abstract
AQUEOUS extracts of raw soya beans have been shown to be capable of inhibiting proteolysis of casein by pancreatin1 and trypsin2. According to Read and Haas3, they possess inhibiting action on trypsin and the proteinase of taka-diastase, but not on papain or bromelin.
