Abstract
McCance and Widdowson1 found that adult man excreted approximately half the ingested phytin of wheaten flour unchanged in the fæces and that the phytin seriously interfered with the absorption of dietary calcium. It appeared important to us to investigate the availability of the phytin of another staple cereal, oatmeal, in adult man and its influence on calcium absorption.
